Eggs in Red Chile Sauce with Poblano Strips
A simple yet delicious traditional Mexican dish featuring eggs prepared with a homemade red chile sauce and roasted poblano pepper strips. This ranch-style home-cooked lunch is easy to prepare but packed with authentic flavor, perfect served alongside refried beans.

Gather all ingredients: tomatoes, cilantro, onion, dried chiles for frying beans, perón chile, garlic, eggs, poblano peppers, chile de árbol, and puya peppers.

Toast the poblano and red chiles lightly on a comal to release their flavors. Heat water in a pot to prepare for soaking the roasted chiles.

Place the toasted red chiles into the hot water to soften. Carefully add the chile de árbol and puya peppers, being mindful not to burn them.

Position tomatoes, onion, and garlic on the comal alongside the chiles to roast until well-charred.

Remove the charred tomatoes, onion, and garlic from the comal. Allow the soaked chiles to continue softening.

When the chiles are fully softened, remove them from the water and cover with a towel to allow them to steam, making peeling easier.

Fry the beans in a bit of lard or oil. Chop the perón chile and add it, followed by adding the poblano peppers.

Once the beans are golden brown and cooked through, remove from heat and set aside.

Peel the softened chiles, remove the seeds and membranes from inside, and cut into strips.

Make the sauce using the roasted red chiles, soaking liquid, onion, and garlic. Lightly crush the tomatoes and add to a blender along with the other ingredients. Add just a pinch of salt and blend until smooth.

Heat oil in a pot. Crack the eggs into a bowl, add a small amount of minced onion and salt, then beat well.

Pour the beaten eggs into the hot oil. Once the eggs begin to set, add the red chile sauce. Top with the chile strips, drizzle with oil, and garnish with cilantro.

Pour the sauce into the pan with the eggs and add the chile strips. Allow everything to simmer together briefly until the flavors meld.
