Espinazo (Spinal Ribs) in Green Chile Sauce

Bring water to a boil in a large pot and add bay leaves, half an onion, and salt to prepare for cooking the ribs.

Add the 1.5 kg of spinal ribs to the boiling water and cook until the meat is tender.

Prepare the sauce ingredients: remove stems and halve the poblano and serrano chiles; remove stems and seeds from jalapeños and chop; dice the tomatoes and garlic.

Heat oil in a pan and fry all the prepared chiles, tomatoes, and garlic until soft and beginning to brown.

Add a splash of water to the fried sauce mixture and continue heating until well combined.

Once the sauce mixture cools slightly, grind it into a smooth sauce using a traditional mill or blender.

Remove the cooked ribs from the broth and brown them in hot oil in the pan.

Pour the ground green chile sauce over the ribs, add the chopped cilantro, and simmer until the sauce thickens and flavors fully develop.

Serve the spinal ribs and sauce over rice, beans, or with your preferred side dishes.
