Make the pesto: Add peeled garlic and seeded serrano pepper to a food processor and pulse to combine.

Add pine nuts, Parmesan cheese, and fresh basil leaves. Continue processing while slowly drizzling in olive oil until the mixture emulsifies and reaches a smooth sauce consistency. Pause to push down the sides, taste, and adjust seasoning with salt and pepper.

Make the vodka sauce: Heat olive oil in a small pot and add diced red onion. Cook for 2–3 minutes until softened.

Add more olive oil and minced garlic. Cook until fragrant, about 1–2 minutes.

Stir in the tomato paste and let it sizzle for 1–2 minutes to deepen the flavor.

Pour in 1/4 to 1/3 cup of vodka and stir well. Let it cook for about 2 minutes to allow the alcohol to burn off while the flavor intensifies.

Add the heavy cream and mix well. Simmer for about 2 minutes until the sauce thickens slightly and becomes evenly combined with a uniform pink color (no streaks).

Season with smoked paprika, red pepper flakes, salt, and black pepper. The sauce is now complete; keep it warm on the stove but no need to continue reducing.

Make the marinara sauce: In a bowl, combine a 28 oz can of crushed tomatoes with chopped garlic, olive oil, dried oregano, red pepper flakes, kosher salt, black pepper, and a pinch of sugar to balance acidity. Mix well. No cooking needed.

Prepare the pizza dough: Dust it with flour and gently stretch it out to about a 12-inch circle. Dust the pizza peel with flour to prevent sticking.

Distribute 4 oz of torn fresh mozzarella pieces over the dough.
