Fried Tofu Stuffed with Rice (Yubuchobap)
A simple and delicious lunch dish made with marinated fried tofu triangles stuffed with seasoned white rice. Quick to assemble and perfect for packed lunches or picnics.

Have cooked white rice ready in a bowl. Prepare the yubuchobap kit which contains marinated fried tofu triangles, vinegar sauce, sesame seeds, dried carrot, and dried green onion.

Pour the vinegar-based sauce from the kit into the rice, tasting as you go and using approximately 2 teaspoons. Mix well and let the rice cool slightly.

Open the fried tofu package and squeeze out the marinade liquid. Add the sesame seeds, dried carrot, and dried green onion from the packet to the seasoned rice, plus additional sesame seeds to taste. Mix gently by hand or with a small scoop.

Using a small cookie scoop or spoon, scoop out a portion of rice (about 1 tablespoon) and gently press it down to form a compact rice ball.

Carefully place the rice ball into the pocket of a fried tofu triangle. If needed, wet your hands slightly to help shape the rice ball by hand.

Repeat steps 4 and 5 until all 14 tofu triangles are filled with rice.

Pack the filled tofu rolls into a lunchbox, optionally adding pickled radish and umeboshi as sides. Wrap the lunchbox with cooking foil if desired.
