   Unroll both puff pastry sheets. Using a 20 cm round template (or plate, lid, etc.), cut two circular discs from the puff pastry. If already round, use as-is.

   Stack any puff pastry scraps by folding rather than rolling into a ball to preserve the lamination. Refrigerate for later use.

   Spread chocolate-hazelnut spread generously in the center of the first pastry disc, staying away from the edges. Lightly dampen the edges with water, then place the second pastry disc on top.

   Gently press and seal the edges together to trap the filling and bond the two pastry layers. Transfer to the freezer while preparing the cookie dough.

   Make the cookie dough: whisk softened butter (120 g) with sugar (100 g) until well combined.

   Beat in one egg along with a pinch of salt and 1 tsp vanilla powder, whisking until combined.

   Place cookie dough between two sheets of parchment paper. Press gently by hand, then roll thin with a rolling pin. Remove the top sheet and cut a disc using an 18 cm round cutter. Cover with parchment and freeze.

    Remove the puff pastry galette from freezer. Brush the surface with egg wash (mostly yolk). Score a decorative pattern on the surface using the back of a knife, then prick a few small holes for steam vents.

    Place in a preheated 200°C (fan-assisted) oven and bake for 30 minutes.

    After 30 minutes, remove the frozen cookie disc from freezer and carefully place it on top of the partially baked galette. Lower the oven temperature to 190°C and bake for 10–12 minutes more until the cookie is golden.
