   Chop 4 ounces of Baker's German Sweet Chocolate into fine pieces to be added to the cookie dough later.

   Preheat the oven to 350°F. In a bowl, combine the dry ingredients: all-purpose flour, cocoa powder, baking soda, and salt. Sift the mixture to remove any lumps and whisk until evenly distributed.

   Add room temperature butter, light brown sugar, and granulated sugar to the bowl of a stand mixer fitted with a paddle attachment. Mix on medium speed for about 3 minutes until light and fluffy, scraping down the sides halfway through.

   Add vanilla extract and one egg, mixing until combined. Scrape down the bowl, then gradually add the dry ingredient mixture on low speed, being careful not to overmix.

   Place the saucepan over medium heat and stir frequently until the butter melts and the mixture comes to a low boil. Continue cooking for about 1 minute until it coats the back of a wooden spoon.

    Remove from heat and stir in sweetened shredded coconut, the chopped toasted pecans, and vanilla extract. Transfer the mixture to a bowl or plate to cool faster.

    Once the coconut frosting and cookies have cooled completely, scoop about a tablespoon of the coconut mixture onto each cookie and gently press it down.
