Prepare the sauce by combining water, light soy sauce, oyster sauce, sugar, chopped garlic, and white pepper in a bowl. Mix well and set aside.

Remove the soft tofu from its packaging by cutting the corners and gently tapping it out. Lay it flat on a cutting board and carefully slice it into thin pieces by cutting along the center lines.

Pour about half of the beaten eggs onto a plate and swirl gently. Coat the tofu slices with cornflour, then carefully place them on the egg layer. Continue arranging the remaining tofu slices in the same way, then pour the remaining beaten egg on top.

Heat a wok over medium-low heat with a suitable amount of oil. Gently slide the tofu omelette into the wok and use a spatula to lightly press it down. Cook until the edges start to set, then gently shake the wok to ensure the bottom doesn't stick.

When the top of the omelette begins to set, gently shake the wok to check if it slides freely. Flip it over carefully using a spatula, or cut it into pieces and flip piece by piece if preferred. Cook the other side for about 2 minutes until golden.

Mix the sauce again and pour it into the wok. Increase heat to medium-high, cover with a lid, and braise for about 5 minutes. Gently shake and swirl the wok occasionally to help the sauce be absorbed by the eggs and tofu.

Transfer the braised tofu omelette to a serving plate and garnish generously with chopped spring onions. Serve immediately while hot.
