Wrap the tofu in paper towels, place a weight on top, and drain for approximately 10 minutes.
2
Trim the top of the bitter melon, cut it lengthwise in half, and use a spoon to remove the seeds and pith. Slice the bitter melon into approximately 5mm-wide pieces.
3
Place the sliced bitter melon in a bowl, add half a teaspoon of salt, and massage the bitter melon for about 5 minutes to reduce the bitterness.
4
Cut the pork into bite-sized pieces and lightly season with salt and pepper.
5
Crack the egg into a bowl and beat it well.
6
Mix the soy sauce, mirin, and sake together in a bowl.
7
Place the dried bonito flakes in a heat-safe container and microwave at 600W for 1 minute, then crumble into a powder.
8
Pat the tofu dry with paper towels. Quickly rinse the bitter melon under water and pat it dry.
9
Heat sesame oil in a frying pan. Tear the tofu into large pieces, add to the pan, and cook until browned on the edges, then remove.
10
Stir-fry the pork in the same pan until cooked through, then remove.
11
Add the bitter melon to the pan, season with salt and pepper, and stir-fry. Return the tofu and pork to the pan and mix everything together.
12
Pour in the mixed seasoning and bonito powder, stir briefly. Finally, pour in the beaten egg and mix until fully combined.
