Cut the pork ribs into pieces and place in a pot. Add water to just cover the meat, along with a chunk of onion, 2 bay leaves, and salt. Boil until the ribs are completely cooked through.

Meanwhile, seed and remove the stems from the dried chiles. Add 5 puya chiles, 3 guajillo chiles, and 1 negro chile to a pot of boiling water.

Add 2 tomatoes, remaining onion, and 3 garlic cloves to the same pot. Cook everything together until softened.

Transfer the cooked chiles, tomatoes, and aromatics to a molcajete or blender. Add some cooking water, black pepper, and salt, then grind or blend into a smooth sauce.

Once the ribs have browned, pour the chile sauce over them. Simmer everything together, allowing the flavors to meld.

Add cooked beans to finish the dish. Simmer until everything is heated through and well-seasoned.
