While the meat cooks, prepare the three types of chiles: devein and remove seeds from 3 ancho chiles, 6 guajillo chiles, and a handful of árbol chiles.

Cut tomatoes and onion each into three pieces.

Heat oil in a separate pot and cook the tomatoes, onion, and garlic until the tomato softens.

Add the prepared chiles to the pot and cook for a bit, then add water and simmer.

Meanwhile, halve the onion and chop the potatoes into chunks with the skin on.

When the pork is about to brown, add the potatoes and onion, and let them cook slightly.

In a molcajete, grind a small handful each of black pepper and cumin, mix with water, and pour over the pork to infuse the flavors.
