Roughly chop one large onion and four garlic cloves (you can smash them with the flat of your knife). Coarse pieces are fine since everything will be blended later.

Grate 80g of sharp cheddar and 50g of Gruyère using the larger side of a box grater. Always grate fresh cheese when possible, as pre-shredded varieties don't melt as well due to starch coating.

Heat 2 tablespoons of olive oil in a medium saucepan over medium-high heat until shimmering. Add the chopped onion and a pinch of salt, stirring occasionally, and cook for 6–8 minutes until soft and golden.

Spread mayonnaise on one slice of bread, add a generous layer of the cheese mixture, top with a second slice, and butter the outside of the sandwich.
