Prepare the pepper spread. Chop the giardiniera and pepperoncini into chunky pieces and place in a bowl. Add olive oil, red wine vinegar, dried oregano, red pepper flakes, and black pepper, then mix well. This spread will cut through the richness of the mortadella.

Score the edges of the mortadella slices with small cuts to prevent excessive curling during grilling. This traditional technique helps keep the meat relatively flat on the grill.
