Ground Beef and Crispy Lettuce Fried Rice

Mince the garlic and cut the green onions into small pieces, keeping the stems and leafy parts in separate piles. Cut the lettuce into strips and beat the eggs.

Place the ground beef in a bowl and mix in water, soy sauce, dark soy sauce, oyster sauce, rice wine, sugar, white pepper powder, and corn starch until thoroughly combined. Finally add sesame oil and oil.

Heat oil in a pan over medium-high heat. Add the green onion stems and let them season briefly in the oil. Add the marinated ground beef and stir-fry until about 70–80% cooked, then add the minced garlic and continue cooking until fully done. Stir-fry until any liquid in the pan has completely evaporated and the beef looks somewhat dry.

Remove the cooked beef from the pan. Add a little more oil to the pan if needed and stir-fry the rice until it is hot and the grains are separated. Continue stir-frying until the rice is thoroughly heated through.

Create an empty space in the center of the pan, add a little oil, and pour in the beaten eggs. Stir the eggs and rice together until the eggs are fully cooked.

Season the fried rice with salt, sugar, and fish sauce (or substitute with soy sauce if fish sauce is unavailable). Toss quickly to distribute the seasonings evenly.

Return the cooked beef to the pan and mix it with the fried rice. Add the lettuce strips and the leafy parts of the green onions, then toss everything together quickly until well combined.
