Prepare roasted chiles verdes by removing the stem, skin, and seeds. Keep the veins for spice. Open from one spot and release the seeds carefully.

Fill the cleaned chiles with cheese and roll them up.

Press the cheese ball into flour and dust off any excess flour.

Roll the chile back and forth in flour from north to south, adjusting gently if needed.

Flip the prepared cheese chile.

Preheat a cast iron skillet on high heat for about 3 minutes until smoking. Add ground beef to the hot pan.

Break down the ground beef while cooking. Season with minced garlic, garlic powder, onion powder, ground cumin, smoked paprika, black pepper, chicken bouillon, and Mexican oregano.

Push the seasoned ground beef to one side of the pan to continue cooking. Add a little oil to the empty side.
