Place the chicken tenders in the marinade, ensuring they are fully submerged. Marinate for at least 30 minutes; longer is better for flavor development.

Mix the all-purpose flour, corn flour, baking powder, paprika powder, garlic powder, onion powder if using, white pepper powder, salt, and chicken stock powder in a shallow dish.

Remove the marinated chicken tenders from the marinade and coat thoroughly with the dry flour mixture, ensuring even coverage on all sides.

Dip the coated chicken tenders in cold water for about 2 seconds, then coat again with the dry flour mixture. This double-coating creates a thick, craggy crispy exterior.

Heat oil to 175-180°C. Carefully place the coated chicken tenders into the oil and fry until golden brown, about 3-4 minutes. Do not overcrowd the pan to maintain oil temperature. Use moderate heat to prevent the outside from browning too quickly before the inside cooks through.
