Homemade Pickled Ginger

   Peel the ginger and slice it as thin as possible. Take care to achieve uniform thin slices, which are key to the final texture of the pickled ginger.

   Pour 2 cups of water into a small saucepan and add the sliced ginger and salt. Add 3 frozen cherries and bring to a boil over medium-high heat. Stir occasionally and cook for about 8 minutes until the ginger softens and the cherries release their color into the ginger.

   In a clean glass jar, add 2 tablespoons of cane sugar, then add one of the cooked cherries and the sliced ginger. Pour in about 1/2 cup of rice vinegar or just enough to cover the ginger. Cap the jar and shake vigorously to dissolve the sugar.

   Transfer the jar to the refrigerator and chill for ideally 2 days before serving. The pickled ginger will develop a perfect balance of sweet, tangy, and salty flavors with natural spiciness and a beautiful pink color.
