Finely mince the Pixian Doubanjiang and smash the ginger; set both aside.

Heat oil in a claypot or cast iron pot over medium-high heat, fry the ribs until they change color (about 5 minutes), then add the smashed ginger and continue frying until the ribs turn golden brown.

Reduce to low heat, add the minced doubanjiang, and stir-fry until the ribs are evenly coated in red oil.

Pour in hot water and bring to a boil, then add the soy sauce, scallion knot, Sichuan peppercorns, salt and sugar. Cover and simmer over medium heat for about 1 hour.

Add the daikon pieces and continue simmering, covered, for another 30 minutes until tender.

Season with MSG and chicken bouillon powder, then thicken the sauce with the starch-water slurry.

Transfer to a serving bowl with the daikon at the bottom, garnish with cilantro, and serve.
