Rinse the beef ribs under cold water to remove blood. Optionally use vinegar, lemon, or lime to help cleanse.

Trim excess fat from the ribs, but leave some fat to maintain flavor and tenderness.

Bring a large pot of water to a boil. Add 1 tablespoon of salt and aromatic seasonings: skeleion, scotch bonnet pepper, garlic, bay leaf, thyme, and pimento seeds.

Place the trimmed ribs into the boiling seasoned water and simmer for about 30 minutes to half-cook them. This step tenderizes the meat and infuses flavor.

Remove ribs from the boiling water and place on a baking sheet to cool. Prepare a dry spice rub by mixing 1 tbsp each of garlic powder, onion powder, seasoning salt, Maggi all-purpose seasoning, and Cool Running seasoning, plus 0.5 tbsp black pepper and smoked paprika.

Rub the spice mixture evenly over all sides of the ribs, making sure to coat into crevices and underside.

Preheat oven to 375°F. Place the seasoned ribs in the oven and bake for 15 minutes.

Remove ribs from oven, brush with honey garlic barbecue sauce on all sides, return to oven for another 15 minutes.

Apply honey garlic sauce again on all sides, return ribs to top shelf of oven for another 15 minutes. If desired, add one more coat of sauce and bake for an additional 2 minutes until the glaze is sticky and caramelized.

Plate the finished ribs alongside steamed vegetables like broccoli tossed with 1 tablespoon butter, garlic powder, and black pepper.
