Trim the ends of the ginger root and peel it. Grate the ginger vertically against the grain to prevent breaking the fibers. Collect 1 tablespoon of grated ginger including the juice and transfer to a saucepan.

Thinly slice the lemon and cut into quarters.

Add 2 cups of water to the saucepan and bring it to a simmer over medium heat.

Meanwhile, prepare a slurry by mixing 1 tablespoon of water with 0.5 tablespoon of potato starch or cornstarch.

Once simmering, lower the heat and add 2 tablespoons of honey, stirring to ensure it dissolves completely.

Add 1 to 2 teaspoons of freshly squeezed lemon juice.

Mix the slurry once more and add it to the ginger tea, stirring quickly to prevent lumps from forming.

Once the ginger tea has slightly thickened, pour it into cups and top with a lemon slice. Enjoy.
