1
Prepare all your chosen vegetables by cutting them into small, uniform dice.
2
Mix corn flour with water in a small bowl to create a smooth slurry that will be used to thicken the soup.
3
Heat oil in a large pot and stir-fry ginger, garlic, green chili, and onion until aromatic and the onion becomes translucent.
4
Add mushroom if using and stir-fry thoroughly until well combined.
5
Add carrot, cabbage, beans, corn, and bell pepper with a pinch of salt. Stir-fry on high heat for 2 minutes, keeping the vegetables crisp and not overcooked.
6
Pour in water or vegetable stock and mix everything together thoroughly.
7
Add red chili sauce, vinegar, soy sauce, and black pepper powder, then adjust the flavors to your taste.
8
Restir the corn flour slurry and slowly pour it into the soup while continuously stirring to prevent lumps from forming.
9
Bring the soup to a boil and simmer for 2 minutes, allowing all flavors to meld together and the soup to thicken properly.
10
Finish by garnishing with fresh coriander and spring onion, then serve hot and enjoy.
