   Heat oil in a clay cooking pot (cazuela). Prepare ingredients: chop tomatoes into chunks, keep jalapeños and serrano peppers whole, and halve the onion and garlic.

   When the pot is hot enough, add the tomatoes, peppers, onion, and garlic. Fry them until they begin to soften.

   Add a small amount of water to help soften the firmer peppers. Allow the mixture to boil until all the peppers are tender.

   Remove the cooked pepper mixture and let it cool. Meanwhile, prepare a second pot for frying eggs, heat it, and add a small amount of oil.
