Crush the roasted saffron coarsely and mix it with 2 tbsp of milk.

Heat the remaining milk in a nonstick pan until warm, then add ghee and refined flour. Cook for 3-4 minutes until the mixture thickens.

Add the castor sugar and cook until the mixture starts to pull away from the sides of the pan.

Pour in the saffron milk and mix well.

Spread a small amount of the mixture on a plate and let it cool. Once it can be rolled easily without sticking to your hands, it is ready.

Place a sheet of butter paper on the work surface, spread the mixture on it, top with another sheet of butter paper, and use a rolling pin to roll it into a thin sheet.

Sprinkle almond flakes and pistachio powder on top, gently press with the rolling pin, then air dry for 2 days.
