Built on a flavourful broth made from chicken drumstick and dried scallops, enriched with glass noodles, crab meat, and mushrooms, this impressive yet surprisingly simple soup captures all the essence of the original.

Prepare the broth base by simmering the chicken drumstick in water for about 1 hour. Set aside the dried scallops that have been infused into the broth, then remove them.

Prepare the mushrooms: trim the shiitake stems, lay the caps flat, and slice thinly. Soak the dried wood ear mushrooms to soften, remove the tough central portion, and slice into thin strands.

Carefully shred the cooked chicken meat into thin, fine strands to keep the soup smooth and comfortable to eat.

Add the shredded chicken, scallop strands, shiitake, and wood ear mushrooms to the broth.

Add the crab meat and glass noodles. As the soup comes to a boil, add Shaoxing wine and soy sauce, then simmer for about 10 minutes.

Season with a pinch of salt and white pepper. Add dark soy sauce if desired to deepen the colour of the broth.

Mix cornflour with a little water to form a slurry, then pour into the vigorously boiling soup to thicken it.

Beat an egg and slowly pour it into the vigorously boiling soup to create egg threads.

Serve the soup hot, garnished with coriander.
