Ingredients
Oil
~2 tbsp
est.
Mustard seeds
~½ tsp
est.
Urad dal
~1½ tbsp
est.
Chana dal
~1½ tbsp
est.
Cashews
~¼ cups
est.
Wheat semolina (Bansi rava)
~2 cups
est.
Yogurt/Curd
~¾ cups
est.
Carrot, grated
~1 medium carrot
est.
Coriander, chopped
~2 tbsp
est.
Salt
~1 tsp
est.
Buttermilk or water
For consistency adjustment
~1/4 to 1/2 cups
est.
Effervescent baking soda (Eno)
~½ tsp
est.
Steps

Heat oil and add mustard seeds, urad dal, and chana dal, sizzling until crackling and fragrant.

Pour the tempered oil into the wheat semolina, add cashews, and roast while stirring until fragrant.

Transfer the roasted semolina to a bowl and let it cool completely.

Once cooled, add yogurt, grated carrot, and chopped coriander, mixing well.

Add salt and adjust consistency by adding buttermilk or water if needed.

Let the batter rest for 10 minutes to allow the semolina to absorb moisture.

After 10 minutes, adjust the consistency and add effervescent baking soda, gently folding until the batter becomes light and airy.

Pour the batter into greased idli molds, filling only three-quarters full as the batter will double during steaming.

Steam for 15 minutes until the semolina is fully cooked.

Cool slightly after steaming, then gently unmold the idlis.

Serve with tomato chutney or spice powder (podi).
