Ingredients
Poha (flattened rice, medium thickness)
If using thin poha, soak a bit longer

Curd (yogurt)
Makes the mixture soft and the vada light and tasty inside

~½ tsp

Asafoetida (hing)
~¼ tsp

Onion, chopped
~½ cup

Coriander leaves, chopped
~¼ cups

Curry leaves
~10-12

Ginger, chopped
~1 tbsp
est.
Green chili, chopped

Boiled potato, mashed or chopped
~½ cup

Baking soda
~¼ tsp
est.
Rice flour (optional, to balance a watery mixture)
~2-3 tbsp
est.
Oil for frying
~2-3 cups

Vegetables of your choice (optional)

Steps

Soak the poha in water for about 5 minutes; if using thinner poha, soak it a bit longer.

Squeeze out the excess water from the soaked poha and transfer it to a large plate.

Mash the poha thoroughly until it forms a smooth mixture, which makes shaping the vada easier later.

Add curd, salt, cumin, and asafoetida, then mix everything well.

Mash the mixture again so it becomes smooth and well-bound; add more curd if it's too dry, or a little rice flour if it's too watery.

Mix in the onion, coriander, curry leaves, ginger, chili, boiled potato, and baking soda, adding any other vegetables you like, and combine well.

Wet your hands, take a portion of the mixture, shape it into a ball to form the vada, and make a hole in the center.

Carefully drop the vadas into hot oil and fry over medium heat, gently stirring occasionally so they cook evenly on all sides.

Fry until golden and crispy, then remove and drain on paper to remove excess oil.

Serve hot with coconut chutney, tomato sauce, or sambar.
