How to Make Instant Pot Chawanmushi (Recipe) 茶碗蒸しの作り方 (圧力鍋)
dashi400 ml; use kombu dashi for vegetarian1¾ cups

Usukuchi (light-color) soy sauceor use regular soy sauce or gluten-free soy sauce1 tsp

Prepare the egg mixture by combining dashi, eggs, mirin, usukuchi soy sauce, and kosher salt in a bowl. Stir gently until well combined, being careful not to create too many bubbles.

Prepare the ingredients: marinate the chicken thigh and shrimp separately with sake. Cut the carrot into small pieces, keep the mitsuba and shimeji mushrooms whole, and slice the kamaboko.

Divide the chicken, shrimp, mushrooms, carrot, and kamaboko among five 200-ml chawanmushi bowls.

Carefully pour the egg mixture into each bowl until about three-quarters full. Cover with lids or aluminum foil.

Place the steamer rack in the Instant Pot and add water to the marked level. Arrange the egg mixture bowls on the steamer rack.

Close the Instant Pot lid and set to cook on high pressure for 6 minutes.

After cooking, allow the pressure to release naturally for 10 minutes, then quick-release any remaining pressure.

Open the lid and carefully remove the bowls. Garnish the top of each bowl with mitsuba leaves.
