Gather all ingredients for the meatloaf: ground beef, bread crumbs, Pecorino Romano cheese, eggs, parsley, garlic, tomato paste, and seasonings.

Heat olive oil in a pan and sauté the chopped onion and garlic until softened but not browned.

Add tomato paste to the softened onion mixture and stir well, then let it cool slightly.

In a large bowl, add the beaten eggs first. Then add parsley, Pecorino Romano cheese, dried basil, salt, bread crumbs, shredded mozzarella, and black pepper. Mix everything together.

Add the cooled onion-tomato mixture to the meat mixture and blend together using your hands until everything is evenly combined.

Brush olive oil on a baking pan. Transfer the meat mixture to the pan and shape it into a loaf, brushing the top with a little olive oil.
