The chicken is seasoned, coated using a unique water-and-flour technique, pan-fried until golden, then finished in the oven with a blend of barbecue sauces to soak in the flavors. Rinse the chicken thoroughly. Scrub the chicken twice with lime juice and vinegar, ensuring it is completely clean.

Remove excess fat from the chicken while keeping the skin intact. Separate the joints at the bone to ensure even cooking when frying.

Cut the chicken into quarters, removing any excessive fat pockets while keeping the skin on.

Combine all seasonings in a bowl: one tablespoon each of Flavor-Ites, smoked paprika, all-purpose seasoning, seasoning salt, onion powder, garlic powder, all-purpose Maggi, and oregano, plus half a tablespoon of black pepper.

Using clean hands, sprinkle the mixed seasonings all over the chicken pieces, ensuring even coverage.

Heat corn oil in a Dutch pot. Add a Scotch bonnet pepper to the hot oil for flavor; optionally add garlic, thyme, and scallions as well.
