Before boiling the dumplings, add a little sesame oil to the pot of water and give it a light stir.

Place the dumplings into the boiling water. Don't stir right away — let them cook undisturbed at first so the skins don't tear.

Once the dumplings float, they're not necessarily fully cooked yet — add a splash of cold water to the pot about three times to keep them at a gentle boil until done, adjusting the number of times depending on dumpling size.

Scoop the cooked dumplings out onto a plate and drizzle a little oil over them so they don't stick together.

Let the dumplings rest for about two minutes — the residual heat will make the skins chewier before serving.
