Clean and prepare all the spice ingredients (onion, garlic, spring onion, browning sugar, black pepper, lemon, cinnamon powder, nutmeg). Place them in a food processor with a little oil and blend for about 1 minute until smooth. Set the homemade jerk seasoning aside.

Clean and rinse the chicken drumsticks with lemon juice, vinegar, and cold water, letting them soak briefly. Make several slits in the chicken to help the marinade penetrate deeply.

Coat the chicken with oil, salt, black pepper, mixed herbs, and all-purpose seasoning. Generously apply the homemade jerk seasoning and rub it in thoroughly. Marinate for at least a couple of hours, or overnight for best results.

Place the seasoned chicken in a baking dish and bake in a preheated 200°C oven for 30 minutes.

Baste the chicken with the pan juices using a turkey baster and return it to the oven for another 20 minutes.

Baste once more, then drain all the pan juices into a cup and set aside. Return the chicken to the oven to keep warm.

Pour the reserved chicken drippings into a pan and add barbecue sauce and brown sugar. Simmer on low heat for 3 to 5 minutes until the sauce reduces slightly and develops a rich, glossy appearance.

Plate the roasted jerk chicken and drizzle with the prepared sauce. Serve alongside rice and peas, boiled corn, and coleslaw if desired.
