Set up a wide mixing bowl. Add the maida flour, a pinch of salt, two pinches of baking soda, and two pinches of cardamom powder. Mix the dry ingredients together.

Prepare the syrup: heat the sugar, ghee, and water together in a saucepan until the sugar dissolves completely. Allow to cool to the right temperature.

Pour the cooled syrup into the dry mixture and knead until well combined. Dust lightly with flour to prevent sticking.

Roll out the dough to about 1 inch thick—not too thin like a roti. Cut into small biscuit pieces using a square mold or knife.

Heat the oil to medium-high temperature until hot. Carefully place the biscuits into the hot oil and fry until the edges turn golden brown.
