Heat oil in a pressure cooker, add the cut raw jackfruit with salt and turmeric powder, and stir on high heat for 1-2 minutes. Pour in hot water to cover the jackfruit, cover with the lid, and cook on medium-low heat until one whistle sounds. Turn off the heat and allow the cooker to depressurize naturally.

While the jackfruit cooks, roughly chop the onions and tomatoes. Heat mustard oil in a pan until it smokes, add cumin seeds and let them crackle. Add the onion slices and cook on medium-high heat for 7-8 minutes, stirring, until they turn golden brown.

Once the onions are golden, add garlic, ginger, green chillies, tomatoes, coriander stems, and a large pinch of salt. Stir well and cook on high heat for 2-3 minutes until the tomatoes begin to soften.

Add a splash of hot water, cover, and cook on medium heat for 7-8 minutes until the tomatoes are completely soft. Turn off the heat and let the mixture cool completely, then blend with a little water into a smooth, fine paste.

Once the pressure cooker has depressurized, drain the cooked jackfruit. Heat oil in a kadhai, fry the jackfruit pieces in batches for 3-5 minutes until light golden brown, then drain and set aside.

In the same kadhai, remove excess oil if needed. Add cumin seeds, cinnamon, green cardamom, black cardamom, bay leaf, and mace, and let them crackle. Add the prepared gravy paste along with salt, turmeric powder, Kashmiri red chilli powder, spicy red chilli powder, and coriander powder.

Stir well and cook until the oil separates and rises to the top, which takes about 5-6 minutes. This indicates the spices have released their flavors.

Add hot water to reach your desired curry consistency. Cover and cook for 5-6 minutes on a simmer to allow all flavors to blend together.

Once you remove the lid, you will see a beautiful layer of oil on top. Add the fried jackfruit pieces, mix gently, and cook for 2-3 more minutes. Taste and adjust the salt as needed.

Finish with a pinch of garam masala, a pinch of roasted kasuri methi powder, juice of half a lemon, and plenty of fresh chopped coriander. Mix well and serve.
