A simple and delicious Korean side dish of fluffy steamed eggs with a volcano-like texture. Two cooking methods are shown: stovetop and microwave, both completed in about 10 minutes.

Crack 5 large eggs into a container. Add a pinch of salt and a pinch of sugar, then mix well. The sugar is a flavor enhancer to boost overall taste, not to sweeten the dish.

Thinly slice half a green onion (use sparingly so the eggs rise properly) and finely chop some carrots. Both are optional.

Add 1 cup of water to a heavy-bottomed pot or earthenware pot (ttukbaegi). Stir in 0.5 tsp chicken bouillon powder. Mix well. (Korean beef stock powder can be used as an alternative.)

Place the pot on the stove over medium heat. Once the broth starts bubbling, pour in the egg mixture.

Cook for about 2 minutes while continuously stirring and gently scraping the bottom and sides of the pot to cook the eggs evenly. The mixture will start to look like scrambled eggs. For a fluffier, volcano-like texture, add extra egg mixture around the edges.

Once the eggs look fluffy, reduce heat to low. Add the green onions and carrots, cover with a lid, and cook for 2 to 3 minutes. It is normal if the broth overflows or you smell a slight burnt smell—this indicates proper cooking.

Turn off the heat. Finish with toasted sesame seeds and 1 tsp toasted sesame oil.

(Microwave method) Crack 5 large eggs into a microwave-safe container. Add a pinch of salt, a pinch of sugar, and 0.5 tsp chicken bouillon powder. Beat well.

Add 1 cup of hot water and mix thoroughly. Using hot water is key—cold water takes longer to cook and may result in overcooked, discolored eggs.

Add green onions and carrots. Cover and microwave for 2 minutes.

After 2 minutes, the eggs will start to set. Remove and gently stir with a spoon to ensure even cooking.

Return to the microwave and cook for 3 to 4 minutes more. Note that cooking time may vary depending on your microwave.

Finish with toasted sesame seeds and 1 tsp toasted sesame oil.
