Kuzhi Paniyaram (Sweet Banana Appam)

   Combine one cup of rice flour and one cup of wheat flour together, and add a pinch of salt.

   Grind the jaggery and cardamom into a powder, then mix it into the flour mixture.

   Mash the banana and add it to the mixture along with the shredded coconut.

   Add water gradually to achieve the right batter consistency—not too thick and not too thin.

   Mix in the ghee, then add the baking soda and stir everything together until well combined.

   Heat ghee in a paniyaram mold (appam pan), then fill each spherical cavity with the batter.

   Cook over medium heat, rotating each ball using a stick to ensure both sides cook evenly until golden brown.

   Once the balls turn a beautiful golden color and are fully cooked, remove them from the mold and serve immediately.
