A traditional Hamburg specialty with roots in sailor's cuisine. This hearty dish combines mashed potatoes with corned beef, pickled beets, and pickles, topped with a fried egg.

Peel the potatoes, add salt and water, then boil until soft.

While the potatoes cook, chop the corned beef, beets, and pickles into small pieces and blend them together using a food processor or immersion blender.

Add pickle liquid to the blended mixture to add moisture.

Once the potatoes are cooked through, drain them and mash roughly, leaving some larger pieces.

Mix the corned beef, beet and pickle blend into the mashed potatoes and combine well.

Season the mixture with salt and pepper, being mindful of the salt already in the potato water. The sour taste from the pickles is characteristic and should be preserved.
