An easy home method for making lamb doner kebab meat. Mix all ingredients in a food processor, spread the mixture thin between parchment paper using a rolling pin, roll it up, and bake until moist and tender with an authentic kebab aroma.

Assemble all ingredients including herbs and spices. Grate a small to medium-sized white onion.

Mix all spices together including coarsely ground black pepper, smoked paprika, cayenne pepper, ground cumin, ground coriander, onion granules, garlic powder, and salt. Combine well and set aside.

Place ground lamb in a food processor and level it off. Add parsley, olive oil, yogurt, minced garlic, and grated onion. Finally add the mixed spices.

Cover the food processor and start on low pulse. Once the blades grip the mixture, increase to continuous speed and run for about 45 seconds until everything is well blended.

Transfer the mixture to a separate bowl and cover with cling film or plastic wrap, placing it directly on the mixture to prevent drying. Refrigerate for at least 30 minutes before using.

Preheat the oven to 180°C (355°F) or gas mark 4.

Remove the chilled meat mixture from the fridge. Place a couple of spoonfuls on parchment paper and use the back of the spoon to spread and shape it into a rectangle.

Place a second parchment paper on top and gently press down with your hands. Use a rolling pin with a 2-mm spacer attached and roll from top to bottom using the spacer as a guide.

Gently peel back the top parchment paper. Starting from the bottom, roll up the paper with the meat inside and place it in a suitable baking tin or dish.

Repeat the process with the remaining meat mixture. Use the previous top paper as the bottom for the next one so you always have a fresh piece to peel off.

Cover the baking tin with baking foil and seal it tightly all the way around the rim.

Place the tin in the preheated oven and set the timer for 30 minutes. Bake until the meat is cooked through.

Once baking time is up, carefully remove the foil. Gently lift one roll and unroll it onto a separate dish. The meat should be moist and tender and not stick to the parchment.

Assemble the doner kebab as desired. Spread mayo and hot sauce on a tortilla or pita, add strips of the doner meat, lettuce, sliced red onion, and additional sauce. Roll up and enjoy.
