This amazing blueberry lemon cake is bursting with bright, zingy lemon and blueberry flavor, and it's so easy to make. The secret is plenty of lemon zest and sour cream, which add extra tenderness. It's finished with a blueberry lemon frosting in a semi-naked style for a beautiful, simple look.

Ingredients

Lemon zestUsed generously for bright flavor~2 tbspest.
Sour creamAdds tenderness and moisture to the cake~1 cupest.
Blueberries~1½ cupsest.
Wet ingredients (e.g. butter, eggs, milk)~For a standard 2-layer cake: 1/2 cup butter, 3 eggs, 1/2 cup milkest.
Dry ingredients (e.g. flour, sugar, baking powder)~For a standard 2-layer cake: 1.5 cups flour, 1 cup sugar, 2 tsp baking powder, 1/4 tsp saltest.
Blueberry lemon frostingUsed to frost the outside of the cake~1½ cupsest.

Steps

Mix the wet ingredients together, then combine with the dry ingredients.

Gently fold in the blueberries just until combined, being careful not to overmix the batter.

Pour the batter into cake pans and bake in the oven.

While the cake bakes, prepare the blueberry lemon frosting.

Once the cake has cooled, pipe a ring of frosting around the edge to keep things tidy, then smooth it for a semi-naked look.
