Ingredients

Shortbread crust ingredientsFor pressing into the base~2 cups cupsest.
Fresh lemonsUsed for zest and juice~4est.
Granulated sugarRubbed with lemon zest to release oils~1½ cupsest.

CardamomA pinch for extra flavor~¼ tspest.

Steps

Prepare the shortbread dough, press it firmly into the base of a baking pan, and bake until golden and firm to form the crust.

While the crust bakes, zest the lemons and rub the zest into the sugar to release its fragrant oils.

Whisk the eggs, lemon juice, and a pinch of cardamom into the lemon sugar to create a smooth lemon custard filling.

Pour the lemon custard over the baked crust, torch any small surface bubbles, and bake until the filling is set.

Prepare a silky Swiss meringue and whip it until smooth and glossy.

Once the bars have cooled, pipe the meringue over the top in elegant ribbon shapes.

Optionally, lightly torch the meringue to give it a toasted, marshmallow-like finish.
