Buttery, tender lemon scones packed with bright citrus flavor from lemon zest worked into the sugar. A perfect breakfast treat or afternoon snack.

Ingredients

All-purpose flour~2 cupsest.
Cold butterCubed into small pieces~½ cupest.
SugarWorked together with lemon zest for flavor~¼ cupsest.
Lemon zest~2-3 tbspest.
Buttermilk~¾ cupsest.
Egg~1est.
Vanilla extract~½ tspest.
Powdered sugar (for lemon glaze)~1 cupest.
Lemon juice (for lemon glaze)~2-3 tbspest.

Rub the lemon zest into the sugar to release its fragrant citrus oils.

Cut cold butter into small cubes and work it into the flour by hand until crumbly; these bits of butter will melt and puff up the scones as they bake.

Whisk together the buttermilk, egg, and vanilla extract.

Gradually fold the wet mixture into the dry ingredients until a shaggy dough forms.

Turn the dough out onto the counter, knead briefly, and pat it into a disc.

Cut the dough into the classic wedge shapes and arrange them on a baking tray.

Brush the tops lightly with buttermilk to help them bake up golden brown, then place in the oven.

While baking, whisk together a simple lemon glaze from powdered sugar and lemon juice.

Once the scones are baked and slightly cooled, drizzle with the lemon glaze and enjoy.
