Mirin2 tbsp
Sake2 tbsp
Honey2 tsp
All-purpose flour1 tbsp

Clean the chicken thigh by removing excess skin and fat, cut by section, then cut into bite-sized pieces. Season with salt and black pepper.

Cut the lemon in half. Squeeze juice from one half to get 1 tablespoon of lemon juice. Thinly slice the other half, remove seeds, and cut into half-moon shapes for garnish.

Pat the chicken dry with paper towels, then coat evenly with all-purpose flour, making sure all sides are covered.

Heat vegetable oil in a frying pan over medium heat for about 30 seconds. Place chicken skin-side down and cook for about 2 minutes until browned.

Flip the chicken, reduce heat to low, cover the pan, and steam-fry for 3 minutes until cooked through.

Remove the lid, return to medium heat. Wipe away excess oil and lightly brown both sides of the chicken until golden, then transfer to a plate.

Turn off heat and wipe away excess oil from the pan. Add sake, mirin, soy sauce, 1 tablespoon of lemon juice, and honey. Mix well and bring to a boil over medium heat.

Once boiling, simmer for about 1 minute until the sauce thickens and becomes glossy.

Return the chicken to the pan and coat thoroughly with the sauce. Finally, add the lemon slices and gently mix until evenly coated. Optionally sprinkle with black pepper for extra flavor.
