Preheat the oven to 375°F. Cook the bacon until crispy, then crumble it to yield about 1 cup of cooked crumbled bacon.

In a bowl, combine cornmeal, flour, baking powder, salt, and sugar. Whisk together until well combined.

Finely chop the scallions or chives and set aside.

Add the eggs, milk, sour cream, and melted butter to the cornmeal mixture.

Stir in the cream style corn and crumbled bacon.

Add most of the 4 oz of grated cheddar cheese (reserving some for the top) and the chopped scallions. Whisk or stir until everything is well combined.

Pour the batter into a buttered 9 by 9 inch casserole pan.

Sprinkle the reserved cheese on top and bake in the preheated 375°F oven for about 30 minutes, until the edges are set but the center is still slightly wobbly.

Remove from the oven and let cool for 15 to 20 minutes before cutting and serving.
