Lod Chong - Pandan Noodles in Coconut and Syrup
Silky pandan noodles in a sweet palm sugar syrup infused with pandan leaves and jackfruit strands, topped with coconut cream and ice. Refreshing, aromatic, and delightfully creamy.

Make the syrup: combine 500 g palm sugar, 500 ml water, and 5 pandan leaves in a pot. Cook over medium heat until the sugar dissolves completely.

Continue heating until the syrup slightly reduces and the pandan leaves begin to fade. Turn off heat, add the jackfruit strands, and let cool.

Prepare the coconut cream: heat 1000 ml coconut cream with 1 tsp salt over medium heat until it starts to bubble, then turn off heat and cool.

Make pandan extract: wash 15 pandan leaves and blend with 300 ml water until finely processed. Strain through a fine sieve and reserve the liquid.

Combine the tapioca starch: place 250 g tapioca starch in a mixing bowl.

Heat the pandan extract: pour it into a pot over medium heat. When it begins to bubble, add about 1 tbsp tapioca starch and stir to distribute the color evenly throughout the liquid.

Gradually pour the hot pandan liquid into the tapioca starch bowl while stirring constantly. The heat partially cooks the starch, which prevents the noodles from breaking when extruded.

Knead the mixture until it becomes smooth, elastic, and pudding-like in texture.

Prepare to extrude the noodles: dust the work surface and rolling tool lightly with tapioca starch to prevent sticking.

Divide the tapioca dough in half. Use a noodle press or Thai noodle maker to extrude the dough into long strands.

Cut the extruded noodles into approximately 3 cm pieces with a knife. Keep the thickness at about 2-3 mm and avoid cutting them too long.

Cook the noodles: drop the cut noodles into boiling water and cook for about 5 minutes until they are tender and cooked through.

Scoop out the noodles with a slotted spoon and immediately plunge them into ice-cold water. This is the secret to keeping them tender and preventing them from sticking.

Assemble the dessert: place the cooled noodles in a bowl, pour the cooled syrup with jackfruit over them, add ice, and finish with the cooled coconut cream.
