   Separate the pork belly slices and season with salt and black pepper, mixing gently. Set aside.

   Wash the onion and trim, then cut into thick strands. Slice scallion diagonally. Mince garlic to about 30g. Julienne the carrot. Remove the stem from wood ear and cut into small pieces. Prepare the Chinese broccoli.

   Clean the cuttlefish and remove the head, then cut into thirds and into large pieces. Carefully handle the head, avoiding the mouth area, and remove the innards. For smaller squid, place the flat side up with chopsticks underneath to prevent splitting, and make light cuts on the surface.

   Purge and refrigerate the clams. If no broth stock is available, prepare instant ramen or plain curly noodles as an alternative.

   Heat the pan over medium heat for about 90 seconds, add a little sesame oil, then add the pork belly slices. Use chopsticks to gently separate them and fry until the surface is golden brown.

   Add some onion, scallion, minced garlic, and carrot strips to the pan and stir well. Add the cabbage and cook until soft. Drizzle soy sauce around the edges of the pan for flavor, then add a little cooking wine.

   Turn heat to low, add the Korean fine and coarse chili powders. Add a splash of wine or water to prevent sticking. Stir until the vegetables turn red and the base is well combined.

   If using cuttlefish or octopus, add it and toss briefly. Switch to medium heat and pour in the prepared broth, stirring gently to combine. Scrape the edges of the pan clean and add 1 tablespoon of oyster sauce for depth of flavor.

   Add the Korean curly noodles and cook for about 1 to 2 minutes, then add the clams. Gently press the noodles to help them absorb the broth.

    When the noodles are nearly cooked, push them to the side and add the cuttlefish, cabbage, and bok choy. Garnish with chili flakes and wood ear mushroom. Top with a boiled egg and squid for presentation.
