Prepare your ingredients: measure out the Madeira wine and beef stock, then heat the stock in a small saucepan to a boil for 1–2 minutes. Slice or cube the mushrooms and finely mince the shallot.

Heat oil and butter in a pan over medium heat and pan-fry the mushrooms until lightly browned. Reserve in a bowl to save time during sauce assembly.

Select a properly sized pan—one that comfortably fits your steaks with just enough space around them. Oversized pans cause oils to burn; undersized ones cramp the meat. Season the steaks with salt and pepper just before cooking.

Add oil to the pan and heat over medium-high until it moves fluidly like water. Sear the steaks 2–3 minutes per side, turning occasionally to distribute the caramelized pan juices evenly. This creates the flavorful base for the sauce.

Once the steaks reach your desired doneness, turn the heat to low, transfer them to a plate, and cover with foil to keep warm while you finish the sauce.

Add the minced shallot to the pan, using the residual heat to cook it briefly. The shallot will absorb the oil and add subtle flavor to the sauce base.

Pour the Madeira wine into the pan and scrape the bottom with a spoon to deglaze, releasing all the caramelized pan juices. This creates the first flavor profile of your sauce.

Raise the heat and reduce the Madeira until only about 1–2 teaspoons of liquid remain, concentrating the wine's flavor.

Pour in the heated beef stock and bring to a boil. Reduce the heat and continue simmering, concentrating the sauce until it develops a syrupy, glossy glaze-like consistency.

Add the reserved sautéed mushrooms back to the pan, coating them evenly in the reducing sauce until glossy.

Lower the heat. The sauce is nearly finished when it transforms from a runny stock to a thick, syrupy glaze.

Turn off the heat. Add a half teaspoon of fresh Madeira and then add a small piece of butter, gently stirring with a wooden spoon to incorporate without vigorous whisking.

Plate the steaks and drizzle the Madeira mushroom sauce around and over them. Garnish with fresh parsley if desired and serve immediately.
