Pat the 2-kilogram chicken completely dry with paper towels. Carefully lift the skin under the chicken breasts for seasoning, being cautious not to tear it.

Prepare vegetables: wash potatoes and cut into medium chunks leaving the skin intact. Peel and chop carrots into suitable pieces.

Make the marinade: combine mayonnaise, 2 garlic cloves, 2 green onions (including green parts), dried oregano, ground cumin, 1 seeded canned chipotle pepper, a small amount of apple vinegar, black pepper powder, salt, and chicken bouillon powder in a container. Blend thoroughly with an immersion blender until smooth.

Taste the marinade and adjust salt levels to ensure proper seasoning, as no additional salt will be added to the chicken. Reserve some marinade for seasoning the vegetables.

Fill the chicken cavity with a generous amount of marinade. Coat the undersides of the breasts with ample marinade for flavor and to keep the meat juicy. Apply the marinade evenly over the entire skin, starting from the bottom, then flip and coat the top side. Ensure the marinade layer is light and even for uniform browning in the oven.

Marinate the chicken for 1-2 hours (or at minimum while preparing vegetables and preheating the oven). Preheat oven to 425°F (220°C).

Place the chopped potatoes and carrots in a baking dish. Season the vegetables with the reserved marinade and distribute evenly. Push the vegetables to the edges of the dish and place the marinated chicken in the center. Tuck the wings underneath to prevent burning and tie the legs together.

Place the baking dish in the oven. Roast for approximately 1 hour and 15 minutes. During the last 15 minutes, cover the chicken with aluminum foil to prevent over-browning. Check for doneness by piercing the thickest part of the thigh with a knife tip; if the liquid runs clear, the chicken is done.

Remove the chicken from the oven. Let it rest for 15-20 minutes before carving to retain the juices within the meat. Then carve and serve.
