A classic Italian dish of oversized pasta shells stuffed with seasoned ground beef, breadcrumbs, cheese, and fresh herbs, topped with tomato sauce and melted mozzarella, then baked until golden.

Prepare the tomato sauce: heat olive oil in a pot, sauté onion and garlic until fragrant, add tomato puree, salt, pepper, and fresh basil leaves, and simmer for 15-20 minutes until the sauce is well developed.

Prepare the meat: heat oil in another pot, sauté onion and garlic, add ground beef and break it apart while cooking until browned and no longer pink, seasoning with salt and pepper. Once fully cooked, drain through a colander and let cool completely.

Cook the pasta shells: bring a large pot of salted water to boil, add shells and cook until just half done (they will finish cooking in the oven), then drain and immediately plunge into cold water to stop cooking, then drain again.

Prepare the filling: place cooled meat in a bowl, beat in eggs and mix well, then add salt, pepper, breadcrumbs, Pecorino Romano, mozzarella, parsley, and some of the prepared sauce, stirring until fully combined.

Assemble: spread a layer of tomato sauce on the bottom of baking dishes, use a small spoon to fill each shell with the meat mixture, arrange them in the dishes, and top each with a spoonful of sauce.

Finish: sprinkle Pecorino Romano cheese and mozzarella cheese over the top of all the stuffed shells.

Bake: place in a preheated 350°F oven and bake for 45 minutes, uncovering for the last 5 minutes to allow the cheese to brown. Remove from the oven and let rest for 5-10 minutes before serving.
