Ingredients

Blend the garlic cloves and shallots together until finely ground.

Peel the boiled potato and cut it into medium-sized cubes.

Wash and soak the mustard greens to freshen them, then separate and cut the stems into approximately 1-inch pieces and chop the leaves roughly.

Rinse the bean sprouts thoroughly and drain well.

Crack the eggs into a bowl and set aside.

Rinse the yellow noodles quickly with warm water to remove the starch coating, being careful not to soak them too long, then drain thoroughly.

Heat oil in a wok and fry the sliced tofu until golden and crispy on both sides.

Using the same oil, add the ground garlic and shallots and stir-fry until fragrant and golden.

Add the blended chilli paste and stir-fry until the oil is fully infused with the chilli flavour.

Stir in the curry powder and chilli powder, mixing well.

Add the oyster sauce, chilli sauce, sweet soy sauce, salty soy sauce (if using), and tomato sauce in sequence, stirring to combine.

Add the tamarind water mixture to balance the flavours, then add the potato cubes and mustard green stems, stirring until well combined.

Pour in the beaten eggs and stir gently to scramble them into coarse pieces.

Add the drained yellow noodles and toss well to coat evenly with the sauce. If it looks too dry, add a little water.

If a darker colour is desired, add a touch of dark caramel soy sauce.

Add the mustard green leaves and bean sprouts, tossing quickly over high heat until everything is well combined and the vegetables remain crisp.

Taste and adjust seasoning with more sweet soy sauce if needed, then transfer to a serving plate.
