Heat oil in a large pot, add ground beef and cook until browned, seasoning with salt and ground pepper.

Peel and cut zucchini into small cubes, then peel and cube the potatoes.

Blend tomatoes, onion, garlic, and a pinch of cumin in a blender until smooth.

Once the beef has cooked, add the diced potatoes and zucchini to the pot and let them partially cook.

In the same pot to one side, heat a little oil and add the thin noodles, stirring constantly to toast them until golden without burning.

Add the toasted noodles to the pot along with the blended tomato sauce, onion puree, and cilantro. Let everything simmer until fully cooked and tender.
