Prepare the negi: remove the green portion and cut the white part into 2 to 1½ inch pieces. Slice the white part into thin julienne strips and soak in cold water for 10 minutes to remove bitterness, then drain.

Grind 1 tbsp white sesame seeds until fine.

Mince 2 cloves of garlic using a knife or garlic press.

Grate 1 inch of ginger.

Mince one shallot.

In a medium pot, heat 1 tbsp sesame oil over medium-low heat.

Add the minced garlic, ginger, and shallot. Stir-fry until fragrant.

Add ¼ lb ground pork and increase heat to medium.

Cook the meat until no longer pink.

Add 1 tsp doubanjiang (spicy or non-spicy bean paste, depending on preference).

Add 3 tbsp miso and mix well.

Add 1 tbsp sake and 4 cups chicken stock, and bring to a simmer. Simultaneously, boil water in a large pot for cooking the noodles.

Taste the soup and adjust the salt amount based on your preference.

Cover with a lid and keep the ramen soup simmering while preparing the toppings.

Loosen up 2 servings of fresh ramen noodles.

Cook the noodles according to package instructions, typically about 15 seconds earlier than suggested to achieve an al dente texture.

When noodles are done, quickly scoop them out with a mesh sieve, drain the water well, and serve into bowls.
