Wash the potatoes and cut them into thick slices (about 2 cm) for faster cooking.

Heat water in a steamer pot, place the steamer basket with cloth or silicone mat, arrange the potato slices on top, and sprinkle with salt.

Cover and steam over medium heat for about 10 minutes until the potato slices are cooked. Meanwhile, grate or blend the remaining potatoes using a food processor or grater.

Place the grated potato in a strainer and press out the excess moisture. Let the starch settle to the bottom, then discard the water and keep the settled starch.

Mix the potato starch with the grated potato. Season with salt and sugar to taste, and stir well. Optional: add chopped nuts or raisins.

Spoon the potato mixture onto the cooked potato slices, leaving some space for steam to circulate.
